Prepare the Mixture
In a food processor, combine the canned chickpeas (drained and rinsed), chopped parsley, minced garlic, ground cumin, ground coriander, ground sumac, sesame seeds, baking powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

Chill the Mixture
Transfer the falafel mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 30 minutes to firm up.

Shape the Falafel
Once chilled, use your hands to form small balls or patties (about 1.5 inches in diameter) from the falafel mixture.

Fry the Falafel
In a large skillet, heat olive oil over medium-high heat. Fry the falafel in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

Drain and Serve
Remove the fried falafel from the skillet and drain on paper towels. Serve hot with tahini sauce, pita bread, and your choice of garnishes.
