Prepare the Anise Infusion
In a large bowl, combine the anise seeds and water. Allow it to steep for 24 hours to extract the flavor.

Fermentation
Strain the anise infusion and transfer it to a fermentation vessel. Add yeast and sugar, and stir well. Cover the vessel and let it ferment for about 7 days at room temperature.

Distillation
After fermentation, transfer the mixture to a still and distill it to extract the alcohol. Collect the distillate and discard the first 10% (foreshots).

Dilution
Dilute the distilled spirit with additional water to achieve the desired alcohol content, usually around 50% ABV.

Aging
Bottle the Arak and let it age for at least 3 months in a cool, dark place to develop its flavor.
