Prepare the Beef Mixture
In a large bowl, combine ground beef and finely chopped sujuk. Mix well until fully incorporated.

Shape the Rolls
Take a handful of the beef mixture and shape it into a long log. Repeat until all the mixture is used.

Chargrill the Rolls
Preheat a grill or grill pan over medium-high heat. Place the beef rolls on the grill and cook for about 8-10 minutes, turning occasionally until well charred and cooked through.

Prepare the Yogurt and Tomato Sauce
In a small saucepan, prepare a spicy tomato reduction with diced tomatoes, garlic, and chili flakes. Simmer until thickened. In a separate bowl, whisk the thick yogurt until smooth.

Assemble the Rolls
Lay a piece of lavash bread flat. Place a grilled beef roll in the center, top with a spoonful of yogurt, a drizzle of spicy tomato reduction, and sprinkle with chopped pistachios. Roll the lavash tightly around the filling.

Cut the rolls in half and serve immediately, garnished with additional yogurt and pistachios if desired.
