Oysters Preparation

    Ask your server for the daily selection of fresh oysters. Once you have your oysters, rinse them under cold water to remove any grit or sand.

    Shuck Oysters

    Using an oyster knife, carefully shuck each oyster, prying open the shell while keeping the oyster in its bottom shell. Ensure you keep the oyster juice in the shell.

Mignonette Sauce Preparation

    Combine Ingredients

    In a small bowl, combine the red wine vinegar, finely chopped shallots, and freshly cracked black pepper. Stir well to mix the flavors.

    Let it Sit

    Allow the mignonette sauce to sit for at least 10 minutes to let the flavors meld together.

Serving

    Plate Oysters

    Arrange the shucked oysters on a serving platter, making sure to keep them upright to retain their juices.
