Cook the Lobsters
In a large pot of boiling water, cook the live lobsters for about 8-10 minutes until they turn bright red. Remove them from the pot and let them cool.

Extract Lobster Meat
Once cooled, remove the lobster meat from the shells and chop it into bite-sized pieces. Set aside the shells and the meat separately.

Add Tomato Paste and Lobster Shells
Stir in the tomato paste and add the lobster shells. Cook for an additional 3 minutes, stirring occasionally.

Carefully pour in the cognac or brandy and allow it to simmer for 2-3 minutes, scraping the bottom of the pot to release any stuck bits.

Pour in the fish stock or seafood stock, then add the thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let simmer for about 25 minutes.
