Crust Preparation
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and granulated sugar. Melt the unsalted butter and mix it with the crumb mixture until well combined.
- 2
Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the back of a measuring cup to compact the crust. Bake in the preheated oven for 8-10 minutes, until golden brown. Remove from the oven and let cool.
Filling Preparation
- 3
Make the Filling
In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth and well combined.
- 4
Fill the Crust
Pour the lime filling into the cooled graham cracker crust, spreading it evenly.
- 5
Bake the Filling
Bake the pie in the oven at 350°F (175°C) for 10-15 minutes, until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours, or until chilled.
Topping Preparation
- 6
Prepare the Topping
In a mixing bowl, beat the heavy whipping cream and powdered sugar together with an electric mixer until stiff peaks form.
- 7
Top the Pie
Spread the whipped cream over the chilled pie, making sure to cover the lime filling completely. Garnish with lime slices on top.
