Method

Prepare Mussels

    Clean the Mussels

    Rinse the fresh mussels under cold water, scrubbing the shells to remove any dirt or barnacles. Remove the beards by pulling them off firmly.

    Sauté Garlic

    In a large pot, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.

    Add Wine and Mussels

    Pour in the Chablis wine and bring to a simmer. Add the cleaned mussels, cover the pot, and cook for about 5-7 minutes until the mussels open up.

    Finish the Sauce

    Once cooked, remove the mussels with a slotted spoon and set aside. Stir in the remaining butter, parsley, thyme, salt, and pepper into the broth, letting it bubble for a minute.

Grill Focaccia

    Prepare Focaccia

    Brush the focaccia bread with olive oil on both sides and sprinkle with fresh rosemary.

    Grill Focaccia

    Heat a grill or grill pan over medium-high heat. Grill the focaccia for about 2-3 minutes on each side until crispy and golden brown.

Serve

    Plate the Dish

    Serve the mussels in a bowl with the garlic Chablis sauce poured over the top. Accompany with grilled focaccia on the side.
