    Prepare the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and well combined.

    Heat the Oil

    In a deep frying pan or skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Fry the Haddock

    Dip each haddock fillet into the batter, allowing any excess to drip off. Carefully place the battered fillets into the hot oil, frying in batches to avoid overcrowding. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the fillets and drain them on paper towels.

    In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and fresh dill. Mix well until all ingredients are combined.
