Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Breading
In a bowl, mix the flour, cornstarch, salt, black pepper, and paprika.

Coat the Calamari
Dip the calamari rings in buttermilk, then dredge them in the flour mixture, ensuring they are well coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Vegetables
In a large bowl, combine the cauliflower florets, sliced carrots, diced green bell pepper, diced celery, and minced garlic.

Make the Marinade
In a separate bowl, mix the red wine vinegar, olive oil, dried oregano, salt, and crushed red pepper flakes.

Combine and Marinate
Pour the marinade over the vegetables and mix well. Cover and refrigerate for at least 2 hours or overnight for best flavor.

In a small saucepan over low heat, combine honey and red pepper flakes. Stir until heated through and well combined. Remove from heat and let cool.
