Method
Fish
- 1
Prepare the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined.
- 2
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Make sure there is enough oil to fully submerge the fish.
- 3
Fry the Haddock
Dip each haddock fillet into the batter, ensuring it's fully coated. Carefully place it in the hot oil and fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Slaw
- 4
Prepare the Slaw
In a large bowl, combine the green cabbage, shredded carrot, julienned apple, chopped jalapeno, and cilantro.
- 5
Make the Dressing
In a small bowl, whisk together the lime juice, olive oil, and salt. Pour the dressing over the slaw mixture and toss until well combined.
- 6
Chill
Cover the slaw and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
French Fries
- 7
Prepare the Potatoes
Peel the potatoes and cut them into thin strips for fries. Soak the strips in cold water for at least 30 minutes to remove excess starch.
- 8
- 9
Final Fry
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 3-4 minutes until golden brown and crispy. Sprinkle with salt immediately after removing from oil.
Tartar Sauce
- 10
Mix the Sauce
In a small bowl, combine the mayonnaise, dill pickle relish, lemon juice, and chopped capers. Stir until well mixed.
- 11
Season
Taste the tartar sauce and add salt and black pepper to taste, mixing well.
