Method
For the Beer-Battered Fish
- 1
Prepare the Batter
In a large bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually add the beer, mixing until smooth and slightly thick. Let the batter rest for about 15 minutes.
- 2
Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches about 350°F (175°C).
- 3
Batter the Fish
Dip each cod fillet into the batter, ensuring it is fully coated.
- 4
Fry the Fish
Carefully place the battered fish fillets in the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
For the Fries
- 5
Prepare the Potatoes
Peel and cut the potatoes into thick sticks. Rinse under cold water to remove excess starch and pat dry with a kitchen towel.
- 6
Heat the Oil
In a separate deep frying pan or pot, heat the oil over medium-high heat until it reaches about 350°F (175°C).
- 7
Fry the Potatoes
Carefully add the potato sticks to the hot oil, frying in batches if necessary. Fry for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.
For the Tartar Sauce
- 8
Mix the Ingredients
In a small bowl, combine the mayonnaise, chopped pickles, capers, lemon juice, and dijon mustard. Stir until well combined.
- 9
Season
Add salt and black pepper to taste. Mix well and refrigerate until ready to serve.
