Filet Mignon

    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

    Season the Steaks

    Season both sides of the steaks generously with salt and black pepper.

    Heat the Pan

    In a large skillet, heat olive oil over medium-high heat until shimmering.

    Sear the Steaks

    Add the steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.

    Add Butter and Aromatics

    In the last minute of cooking, add butter, crushed garlic, and fresh rosemary to the pan. Baste the steaks with the melted butter.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for 5-10 minutes before serving.

Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel the russet potatoes and cut them into quarters.

    Boil the Potatoes

    Place the potatoes in a large pot, cover with cold water, and add a teaspoon of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Cook the Garlic

    In the last 5 minutes of boiling, add whole garlic cloves to the pot with the potatoes.

    Drain and Mash

    Drain the potatoes and garlic, then return them to the pot. Mash until smooth.

    Add Butter and Cream

    Add butter and heavy cream to the mashed potatoes. Mix until creamy and smooth. Season with salt and black pepper to taste.

    Serve

    Serve the garlic mashed potatoes alongside the filet mignon.
