Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Separate the Eggs

    While the chocolate cools, separate the egg whites from the yolks. Place the yolks in a mixing bowl and set the egg whites aside in a clean, dry bowl.

    Mix Egg Yolks and Sugar

    Add the granulated sugar to the egg yolks and whisk until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

    Whip the Cream

    In a separate bowl, whip the 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.

    Beat Egg Whites

    Using a clean mixer, beat the reserved egg whites until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse mixture into serving dishes or cups. Cover and refrigerate for at least 2 hours, or until set.

Whipped Cream Topping Preparation

    Whip the Cream for Topping

    In a mixing bowl, combine the 100 ml of heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

    Serve the Mousse

    Once the mousse has set, remove it from the refrigerator. Top each mousse with a dollop of whipped cream before serving.
