Method

For the Buttermilk Brine

    Prepare the Brine

    In a large bowl, combine buttermilk, salt, black pepper, garlic powder, and onion powder. Stir until salt is dissolved.

    Brine the Chicken

    Add the chicken breasts to the brine, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

For the OB Sauce

    Mix the Sauce

    In a bowl, combine mayonnaise, hot sauce, garlic powder, smoked paprika, and lemon juice. Mix until smooth and refrigerate until needed.

For the House Slaw

    Prepare the Slaw

    In a large bowl, combine shredded cabbage and grated carrot.

    Make the Dressing

    In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

    Combine and Chill

    Pour the dressing over the cabbage and carrot mixture. Toss to coat, then cover and refrigerate for at least 30 minutes.

For the Pickles

    Slice the Cucumbers

    Cut the cucumbers into thin slices.

    Make the Pickle Brine

    In a saucepan, combine white vinegar, water, sugar, salt, and dill. Bring to a boil, stirring until sugar and salt dissolve.

    Pickle the Cucumbers

    Remove the brine from heat and pour over the cucumber slices in a jar. Let cool and then refrigerate for at least 2 hours.

For the Fries

    Prepare the Potatoes

    Wash and cut the potatoes into thin strips.

    Heat the Oil

    In a deep pot, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

    Drain and Season

    Remove fries and drain on paper towels. Sprinkle with salt while hot.

For Assembly

    Cook the Chicken

    Remove the chicken from the brine, pat dry, and cook on a grill or in a skillet over medium heat until fully cooked, about 6-8 minutes per side.

    Assemble the Sandwich

    Spread OB sauce on the bottom half of each bun. Place a cooked chicken breast on top, followed by pickles and house slaw. Top with the other half of the bun.

    Serve the chicken sandwiches with a side of fries.
