Method

Preparation of Croutons

  1. 1

    Prepare Focaccia Croutons

Preheat your oven to 375°F (190°C). Cut the focaccia bread into small cubes, around 1 inch in size.

  2. 2

    Season and Bake

In a large bowl, toss the focaccia cubes with olive oil, garlic powder, and salt until well-coated. Spread them evenly on a baking sheet and bake for 15-20 minutes or until golden brown and crispy, stirring halfway through.

Preparation of the Salad

  1. 3

    Wash and Chop Romaine

While the croutons are baking, rinse the romaine lettuce under cold water. Shake off excess water and chop it into bite-sized pieces.

  2. 4

    Grate Parmesan

Grate the Parmesan cheese finely and set it aside.

Preparation of Dressing

  1. 5

    Mix Dressing Ingredients

In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and anchovy paste until smooth.

  2. 6

    Season the Dressing

Taste the dressing and season with salt and black pepper to your preference.

Assembly of Salad

  1. 7

    Combine Ingredients

In a large salad bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and focaccia croutons.

  2. 8

    Add Dressing

Drizzle the prepared dressing over the salad and toss gently to combine all ingredients evenly.
