Prepare the Mushrooms

    Clean and Cut Mushrooms

    Wipe the Portobello mushrooms with a damp cloth to clean them. Remove the stems and slice them into thick pieces (about 1 inch).

    Season Mushrooms

    In a mixing bowl, combine the olive oil, salt, and black pepper. Add the sliced mushrooms and toss until they are evenly coated with the seasoning.

Make the Japanese BBQ Sauce

    Combine Sauce Ingredients

    In a saucepan over medium heat, combine soy sauce, mirin, brown sugar, sesame oil, minced garlic, and minced ginger. Stir well to combine.

    Simmer the Sauce

    Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the sauce has thickened slightly. Remove from heat and stir in toasted sesame seeds.

Cook the Mushrooms

    Grill or Roast the Mushrooms

    Preheat your grill or oven to medium-high heat. Place the seasoned mushrooms on the grill or a baking sheet if using the oven. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.

    Glaze the Mushrooms

    During the last few minutes of cooking, brush the mushrooms generously with the prepared Japanese BBQ sauce, allowing it to caramelize slightly.

Serve

    Remove the mushrooms from the grill or oven and place them on a serving platter. Sprinkle with chopped scallions for garnish.
