Crispy Potato Rosti

Braised Beef

    Prepare the Beef

    Season the beef chuck roast with salt and pepper. Heat a large Dutch oven over medium-high heat and add 2 tablespoons of olive oil. Once hot, sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.

    Sauté Aromatics

    Add the chopped onion and minced garlic to the Dutch oven, cooking until they are softened and fragrant, about 3-4 minutes.

    Deglaze and Braise

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Add the beef broth, bay leaves, and thyme. Return the beef to the pot, cover, and reduce the heat to low. Let it braise for 2-3 hours until the meat is tender.

Creamed Leek

    Prepare the Leeks

    Trim and slice the leeks, rinsing them thoroughly to remove any grit. In a saucepan, melt the butter over medium heat, add the leeks, and cook until softened, about 5 minutes.

    Make Creamed Leeks

    Add the heavy cream, salt, and pepper to the leeks, stirring to combine. Allow the mixture to simmer gently until thickened, about 5-7 minutes. Remove from heat and set aside.

Crispy Potato Rosti

    Prepare Potatoes

    Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out excess moisture.

    Cook Rosti

    In a skillet, heat the olive oil over medium-high heat. Add the grated potatoes, pressing them down into an even layer. Cook until golden brown and crispy, about 5-7 minutes per side. Season with salt and pepper.

Broccolini

    Sauté Broccolini

    In a separate pan, heat olive oil over medium heat. Add the broccolini and sauté for about 4-5 minutes until tender and bright green. Season with salt and pepper before serving.

Salsa Verde

    Prepare Salsa Verde

    In a food processor, combine the parsley, capers, garlic, lemon juice, and salt. Pulse to combine, then slowly drizzle in the olive oil while processing until smooth.
