Preparation

    Prepare the Seafood

    Clean the mussels under cold water, removing any beards. Peel and devein the shrimp. Cut the finfish into bite-sized pieces.

    Chop Vegetables

    Dice the potatoes, onion, and leek, and mince the garlic.

Cooking the Broth

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion, leek, and garlic, and sauté until softened, about 5 minutes.

    Add Tomatoes and Spices

    Stir in the diced tomatoes, salt, black pepper, thyme, and bay leaf. Cook for another 5 minutes.

    Add Stock and Wine

    Pour in the fish stock and white wine. Bring to a simmer.

    Add Potatoes and Saffron

    Add the diced potatoes and saffron. Simmer for 10 minutes, or until potatoes are tender.

Cooking the Seafood

    Add Seafood

    Add the mussels, shrimp, and fish to the pot. Cover and cook until mussels open and shrimp are cooked through, about 5-7 minutes.

Making the Tapenade Aioli

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, black olive tapenade, lemon juice, and minced garlic until well combined.

Serving

    Toast Focaccia

    Slice the focaccia and toast it lightly in the oven or on a grill.

    Serve Bouillabaisse

    Ladle the bouillabaisse into bowls and serve with a dollop of tapenade aioli and toasted focaccia on the side.
