Prepare the Steak

Remove the New York strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.

Season the Steak

Pat the steaks dry with paper towels. Generously season both sides with salt and black pepper.

Heat the Pan

In a large skillet or cast-iron pan, heat olive oil over medium-high heat until shimmering.

Cook the Steak

Add the steaks to the hot pan. Cook for about 4-5 minutes on one side until nicely browned, then flip and cook for another 4-5 minutes for medium-rare. For medium, cook an additional 1-2 minutes.

Add Flavor

During the last minute of cooking, add crushed garlic cloves and rosemary sprigs to the pan. Spoon the flavored oil over the steaks.

Rest and Serve

Remove the steaks from the pan and let them rest for 5-10 minutes before slicing. Serve with your favorite sides.
