Prepare the Sauce
In a small bowl, whisk together miso paste, soy sauce, grated ginger, minced garlic, sesame oil, and water until smooth. Set aside.

Cook the Noodles
Bring a pot of water to a boil. Add soba noodles and cook according to package instructions, usually about 4-5 minutes. Drain and rinse under cold water. Set aside.

Sauté the Vegetables
In a large skillet, heat a tablespoon of sesame oil over medium heat. Add sliced carrots and bell peppers, and sauté for 3-4 minutes. Add snap peas and cook for an additional 2 minutes until just tender.

Sear the Ahi Tuna
Season the Ahi tuna fillets with salt and pepper. In a separate skillet, heat sesame oil over high heat. Sear the tuna for about 1-2 minutes on each side, or until desired doneness is reached. Remove from heat and slice thinly.

Assemble the Dish
In a large bowl, toss the cooked soba noodles with the sautéed vegetables and miso ginger soy sauce. Plate the noodle mixture and top with sliced Ahi tuna. Garnish with wontons and sprinkle sesame seeds on top.
