Cedar Plank Roasted Salmon

Preparation and Cooking

    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before grilling to prevent it from burning.

    Prepare the Salmon

    In a bowl, mix olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper. Rub this mixture over the salmon fillets and let them marinate for 15 minutes.

    Prepare the Fingerling Potatoes

    Preheat the oven to 400°F (200°C). Toss the fingerling potatoes with olive oil and salt, then spread them out on a baking sheet. Roast for 25-30 minutes or until crispy and golden.

    Prepare the Broccolini

    In a pot of boiling water, blanch the broccolini for 2-3 minutes until bright green. Drain and immediately transfer to an ice bath to stop cooking. Once cooled, toss with lemon zest, grated Parmesan, and a pinch of salt.

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the soaked cedar plank on the grill for about 5 minutes until it starts to crackle and smoke. Place the marinated salmon on the plank and grill for 15-20 minutes or until the salmon is cooked through and flakes easily.

    Serve

    Remove the salmon from the grill and let it rest for a few minutes. Serve the salmon with crispy fingerling potatoes, lemon Parmesan broccolini, and a generous dollop of house garlic aioli.
