Make a simple syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add 2 tablespoons light corn syrup if using. Heat over medium, stirring occasionally, until sugar is fully dissolved and the mixture just reaches a gentle simmer. Remove from heat and let cool 10 minutes.

Stir in 2 tablespoons fresh lemon juice and a pinch of salt into the warm syrup. Taste and adjust acidity or sweetness now — this syrup will carry flavor through freezing, so it should be slightly brighter than you'd want at room temperature.

If you'd like a faint herbal note, add 3-4 fresh mint leaves to the hot syrup, steep for 10 minutes, then remove the leaves before chilling.

Chill the syrup in the refrigerator until cold, at least 30 minutes.

Seasonal Fruit Purée (choose one or blend two)

Prepare fruit

Wash and prepare your chosen fruit: hull strawberries, peel and pit peaches, peel mango, or rinse berries. Cut larger fruits into roughly 1-inch pieces so they purée evenly. Measure 2 cups of prepared fruit.

Place the fruit in a blender or food processor and purée until very smooth (about 30–60 seconds). If the purée is too thick to blend smoothly, add up to 2 tablespoons cold water, a teaspoon at a time, to reach a texture that will pass through a fine sieve easily.

For an extra-silky sorbetto, press the purée through a fine-mesh sieve into a bowl using the back of a spoon. Discard seeds and fibrous bits. This step is required for raspberries or blackberries to remove seeds; optional for mango or peaches.

Taste the purée and add 1 teaspoon grated citrus zest if using. If fruit is under-ripe, add an extra teaspoon of sugar (from reserved amount) or a splash more lemon juice to brighten.

Combine, Chill & Churn

Combine purée and simple syrup

Whisk the chilled simple syrup into the fruit purée until fully combined. Taste and adjust sweetness or acidity: if it tastes flat, add a tablespoon more lemon juice; if too tart, add 1–2 teaspoons sugar dissolved in a bit of warm water.

Chill the combined mixture thoroughly in the refrigerator until very cold, at least 1 hour (better if 2–3 hours). Cold base churns to a lighter texture and freezes faster.

Churn

Pour the cold mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve sorbet consistency (usually 20–30 minutes). The mixture should thicken and increase in volume slightly.

If you don't have an ice cream maker: pour the mixture into a shallow metal or glass pan, freeze for 30–45 minutes until edges begin to set, then vigorously stir/pulse with a fork or whisk to break up ice crystals. Return to the freezer and repeat every 30 minutes until evenly frozen (about 3–4 cycles).

Firm up

Spoon the churned sorbetto into a freezer-safe container, smooth the top, press a piece of parchment paper directly onto the surface to prevent ice crystals, and freeze until firm, about 2–4 hours.

Serve & Garnish

Remove the sorbetto from the freezer 5–10 minutes before serving to soften slightly for easy scooping.

Serve in chilled bowls or stemware. Garnish with a few mint leaves and a dusting of citrus zest. For a spritz-style presentation, spoon 3/4 cup sorbetto into a large wine glass and top with 2–3 ounces chilled prosecco or rosé.

Store leftover sorbetto in the freezer up to 2 weeks. To refresh texture if icy, let soften 10 minutes at room temperature and re-whip briefly with a fork or small blender.
