Burnt Sugar Syrup
Make burnt sugar
Use a small heavy-bottom saucepan over medium heat. Add the granulated sugar in an even layer. Let it melt without stirring for 1–2 minutes until the edges liquefy, then gently swirl the pan or use a heatproof spatula to encourage even melting. Once the sugar is fully liquid and a deep amber (a touch darker than typical caramel but not bitter black), immediately remove from heat.
Deglaze and finish syrup
Carefully pour the 1 tbsp hot water into the hot caramel — it will sizzle. Stir to combine into a thick syrup. Then add the 1/4 cup water slowly while stirring to reach a pourable syrup consistency. If any hardened sugar forms, return to very low heat and whisk until smooth. Allow to cool to room temperature before using. Yields roughly 3/4 cup; store refrigerated up to 2 weeks.

Prepare glass and ice
Select a rocks glass or short tumbler. Place one large clear ice cube in the glass and set aside (or chill the glass briefly).
Shake ingredients
In a shaker, combine 2 oz bourbon, 0.75 oz fresh passion fruit purée (strain seeds if desired), 0.5 oz fresh lemon juice, 0.5 oz cooled burnt sugar syrup, 0.25 oz dry curaçao, and 2 dashes Angostura bitters. Fill the shaker with ice and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Double‑strain and pour
Double-strain the cocktail into the prepared rocks glass over the large ice cube to ensure a silky texture and remove pulp/seeds.
Finish and garnish
Float 1/2 of a fresh passion fruit (spooned pulp) gently on top of the drink for aroma and visual drama. Express an orange twist over the surface and drop it in if using. Optionally, for an extra burnt-sugar note, carefully flame the orange twist over the glass briefly (hold a lit match or lighter under the twist and squeeze) and discard or drop into the drink per preference.
