Dry shake

Add rye whiskey, fresh lemon juice, maple syrup, egg white, and the 3 dashes of Angostura bitters to a cocktail shaker. Do not add ice. Seal the shaker and shake very vigorously for 15–20 seconds to emulsify the egg white and create initial foam.

Wet shake

Open the shaker, add ice (about 1 cup), reseal, and shake hard for 12–15 seconds until the shaker is well chilled and the exterior frosts. This chills and dilutes the cocktail and builds a stable foam.

Double strain the cocktail through a fine mesh strainer (and a Hawthorne strainer if available) into a chilled coupe or Nick & Nora glass to remove ice shards and achieve a smooth texture.

Garnish & Finish

Carefully drop one small dash of Angostura bitters onto the foam; use a toothpick or cocktail pick to drag the dash into a small simple design if desired. Lightly grate a little fresh nutmeg over the foam or express a lemon twist over the top and drop it in for aroma.

Serve immediately while foam is still fresh and set the glass on a small plate or coaster.
