Cocktail
Garnish & ice
Method
Cocktail
- 1
Measure and combine
Add the aged rum, gin, Campari, Suze, fresh pineapple juice, fresh lime juice, rich simple syrup, and one dash of Angostura bitters to a cocktail shaker.
- 2
Ice and shake
Fill the shaker with plenty of ice and shake vigorously for about 12–15 seconds, until the outside of the shaker is well-chilled and slightly frosty. The vigorous shake helps integrate the viscous pineapple juice and syrup with the spirits and liqueurs.
- 3
Strain
Double-strain the mixture (using both the shaker's strainer and a fine mesh strainer) into a chilled coupe or a rocks glass over fresh large ice, depending on whether you prefer it up or on the rocks.
Garnish & serve
- 4
Garnish with a pineapple wedge (or a leaf tucked onto the rim) and a lime wheel or twist. Serve immediately.
