Prepare glass
Fill a large wine glass about three-quarters full with ice cubes. Using plenty of ice keeps the drink cold and preserves the bubbles in the prosecco.

Add Aperol
Pour 3 tablespoons of Aperol over the ice. This is the bitter-sweet base of the drink.

Add prosecco
Slowly add 3 tablespoons of chilled prosecco. Pour gently down the side of the glass or over the back of a spoon to preserve carbonation.

Top with soda
Add 1 tablespoon of chilled soda water to top the cocktail. Adjust soda quantity to taste if you prefer a lighter or more effervescent drink.

Stir gently
Using a long bar spoon, stir the drink once or twice gently to combine Aperol, prosecco, and soda without flattening the bubbles.

Garnish and serve
Garnish with a single orange slice by sliding it onto the rim or dropping it into the glass. Serve immediately while cold and fizzy.
