Method

IN-FLIGHT

  1. 1

    Prepare dry mix

In a large mixing bowl, combine rolled oats, chopped almonds, dried cranberries, mini chocolate chips, and shredded coconut. Stir to distribute evenly.

  2. 2

    Warm wet binder

In a small microwave-safe bowl or saucepan, gently warm peanut butter and honey together until smooth and pourable, stirring every 10 seconds if heating in the microwave.

  3. 3

    Flavor the binder

Stir in vanilla extract and salt into the warm peanut butterhoney mixture.

  4. 4

    Combine

Pour the wet binder over the dry mix. Stir thoroughly until all ingredients are enveloped and the mixture is cohesive and sticky.

  5. 5

    Adjust consistency

If the mixture is too dry and crumbly, add a teaspoon at a time of additional honey or peanut butter until the mixture holds together.

  6. 6

    Chill for shape

Let the mixture rest for 5 minutes to settle, then refrigerate for 15–20 minutes to firm up for easy shaping.

  7. 7

    Form bites

Scoop about 1 tablespoon of the mixture and roll between your palms to form compact balls. Yield: approximately 12 bites.

  8. 8

    Store

Keep the energy bites in an airtight container. Refrigerate for up to 7 days or freeze for longer storage.
