Prepare the Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Reserve about 1 tablespoon of bacon fat in the skillet.

Sauté the Shallot
In the same skillet with the reserved bacon fat, add the chopped shallot and sauté for about 2-3 minutes until softened.

Combine Ingredients
In a large bowl, combine the halved Brussels sprouts, sautéed shallot, cooked bacon (crumbled), olive oil, pear vinegar, salt, and black pepper. Toss until everything is well coated.

Roast the Brussels Sprouts
Spread the mixture evenly on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy, stirring halfway through.

Remove from the oven and serve warm as a side dish.
