    Prepare the Marinade

    In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Mix well to create a marinade.

    Marinate the Lamb

    Rub the marinade all over the lamb rack, ensuring it's well coated. Cover with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Rack

    Remove the lamb from the refrigerator and let it sit at room temperature for 30 minutes. Place the rack in a roasting pan, bone side down.

    Roast the Lamb

    Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).

    Prepare the Topping

    While the lamb is roasting, mix together the capers and preserved lemon in a small bowl.

    Once cooked, remove the lamb rack from the oven, let rest for 10 minutes, then slice between the bones. Serve topped with the caper and preserved lemon mixture.
