Preparation and Cooking

    Prepare the Chicken

    Preheat your grill to medium-high heat. Season the heritage chicken generously with salt and black pepper. Rub the chicken with olive oil to ensure even cooking.

    Grill the Chicken

    Place the chicken on the grill, breast side down. Cook for about 20-25 minutes, then flip and continue cooking for an additional 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 10 minutes.

    Cook the Swiss Chard

    While the chicken is grilling, wash and chop the Swiss chard. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped Swiss chard and sauté until wilted, about 5-7 minutes. Season with salt and pepper to taste.

    Make the Sauce Charcutière

    In a saucepan, melt the butter over medium heat. Add the shallots and sauté until translucent. Stir in the Dijon mustard and red wine (or stock), and let it simmer until reduced by half. Stir in the chopped herbs and season with salt and pepper to taste.

    Serve

    Carve the grilled chicken and arrange it on a platter. Serve with sautéed Swiss chard, cornichons, and drizzle the sauce charcutière over the chicken.
