    Prepare the Pickled Shallots

    In a small saucepan, combine the sliced shallots, white vinegar, and a pinch of salt. Bring to a simmer over medium heat, then remove from heat and let cool. Transfer to a jar and refrigerate for at least 30 minutes.

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the tops off the garlic cloves, drizzle with olive oil, and wrap in aluminum foil. Roast in the oven for about 30-35 minutes, until soft and fragrant.

    Cook the Filet Mignon

    Season the grass-fed filet mignon with salt, black pepper, and fresh thyme. Heat a skillet over medium-high heat with a drizzle of olive oil. Sear the filet for 4-5 minutes on each side for medium-rare, or longer if desired.

    Serve

    Once cooked to your preference, remove the filet from the skillet and let it rest for a few minutes. Serve the filet with roasted garlic on the side and top with pickled shallots.
