Duck and Gastrique

Preparation and Cooking

    Prepare the Duck

    Pat the duck dry with paper towels and season generously with salt and black pepper. Let it sit at room temperature for about 30 minutes.

    Cook the Duck

    Preheat your oven to 375°F (190°C). Place the duck on a roasting rack in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

    Make the Apple Gastrique

    In a saucepan over medium heat, combine the honey and apple cider vinegar. Bring to a boil and let it reduce by half. Add the diced apples and cook until soft, about 10 minutes. Blend the mixture until smooth and set aside.

    Prepare the Pecan Topping

    In a skillet, melt the butter over medium heat. Add the chopped pecans and cook until fragrant and lightly toasted, about 5 minutes. Remove from heat.

    Serve

    Once the duck is cooked, let it rest for 10 minutes before carving. Serve with the warm apple gastrique drizzled over the duck and sprinkle the toasted pecans on top.
