    Prepare the Pork Chops

    Season the Berkshire pork chops with salt and black pepper on both sides. Let sit for 15 minutes to absorb the flavors.

    Sear the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

    Sauté Pearl Onions

    In the same skillet, add pearl onions and sauté for about 3-4 minutes until they start to soften.

    Add Sauce Ingredients

    Pour in the sherry and honey, stirring to combine. Bring to a simmer and cook for 2-3 minutes until slightly thickened.

    Combine and Cook

    Return the pork chops to the skillet, nestling them among the onions. Add fresh thyme, cover, and reduce heat to low. Cook for an additional 10-15 minutes until the pork is cooked through.

    Serve

    Remove the pork chops from the skillet and let rest for a few minutes. Serve warm with onions and sauce drizzled over the top.
