Prepare the Onions
Slice the onions into thick rings, about 1/2 inch thick. Separate the rings and set them aside.

Make the Batter
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer and mix until smooth and well combined. The batter should be thick enough to coat the onion rings.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Drain and Serve
Remove the onion rings from the oil and place them on paper towels to drain excess oil. Serve hot with malt vinegar aioli.
