Preparation

    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the saimin noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    While the noodles are cooking, prepare the vegetables: julienne the carrot, slice the bell pepper and zucchini, and cut the broccoli into florets. Chop the green onions and set aside.

Stir-Frying

    Heat the Pan

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.

    Sauté Vegetables

    Add the minced garlic and ginger to the pan and sauté for 30 seconds until fragrant. Then add the carrots, bell pepper, zucchini, and broccoli. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

    Combine Noodles and Sauce

    Add the cooked saimin noodles to the pan with the vegetables. Pour in the soy sauce and sprinkle with black pepper. Toss everything together until the noodles are heated through and well coated with the sauce.

    Finish with Green Onions

    Add the chopped green onions and toss again to combine. Remove from heat.

Serving

    Plate the Dish

    Serve the veggie saimin hot, garnished with additional green onions if desired.
