Preparing the Chicken

Prepare the Chicken
Cut the boneless chicken breasts into bite-sized pieces. Season with salt and black pepper.

Frying the Chicken
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the breaded chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Making the Sweet N' Sour Sauce

Combine Ingredients
In a saucepan, combine brown sugar, white vinegar, soy sauce, ketchup, pineapple chunks, and water. Stir well.

Thicken the Sauce
In a small bowl, mix cornstarch with a few tablespoons of water to form a slurry. Add this to the saucepan and cook over medium heat, stirring constantly until the sauce thickens, about 5-6 minutes.
Assembling the Plate

Serve the Dish
Arrange the fried chicken on a plate and generously drizzle the sweet n' sour sauce over the top. Serve immediately.
