Prepare Sushi Rice

Rinse and Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes. Remove from heat and let sit for 10 minutes.

Season the Rice
In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Once the rice has cooled slightly, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Prepare Spicy Tuna Filling

Chop the Tuna
Dice the sushi-grade tuna into small cubes and place it in a mixing bowl.

Mix Spicy Tuna
Add mayonnaise, Sriracha sauce, chopped green onions, and sesame oil to the diced tuna. Mix until well combined and set aside.
Assemble the Sushi Rolls

Lay Out the Nori
Place a bamboo sushi mat on a clean surface and place a sheet of nori, shiny side down, on the mat.

Add Sushi Rice
Wet your hands to prevent sticking, then take a handful of sushi rice (about 1/2 cup) and spread it evenly over the nori, leaving a 1-inch border at the top.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling it away from you, pressing gently but firmly to shape the roll. Roll until the top edge of the nori is reached, wet the edge with a little water to seal.

Slice the Rolls
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.

Arrange the sushi rolls on a plate and serve with soy sauce, pickled ginger, and wasabi on the side.
