Method

Preparing the Rice

    Rinse the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve the perfect texture.

    Cook the Sushi Rice

    In a rice cooker or a pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker instructions or bring to a boil, then cover and reduce heat to low, cooking for about 15-20 minutes until the rice is tender.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. While it's still warm, gently fold in the sushi vinegar to season the rice. Let it cool to room temperature.

Preparing the Spam

    Slice the Spam

    Remove the Spam from the can and slice it into 8 equal rectangular pieces.

    Cook the Spam

    In a skillet over medium heat, fry the Spam slices until they are golden brown and slightly crispy on both sides, about 2-3 minutes per side.

    Prepare the Glaze

    In a small bowl, mix soy sauce, mirin, sugar, and sesame oil. Drizzle this mixture over the cooked Spam and let it caramelize for 1-2 minutes, flipping the slices to coat evenly.

Assembling the Musubi

    Prepare the Nori

    Lay a sheet of nori shiny side down on a clean surface or bamboo mat.

    Add Rice

    Wet your hands to prevent sticking and take a handful of sushi rice (about 1/2 cup). Press it down onto the nori, shaping it into a rectangle, leaving the top part of the nori uncovered.

    Add Spam

    Place one slice of the glazed Spam on top of the rice.

    Finish the Musubi

    Add another handful of rice on top of the Spam, pressing it down firmly. Fold the nori over the rice and Spam, tucking it in tightly to create a wrapped package. Use a little water to seal the edge of the nori.

    Repeat

    Repeat the process with the remaining ingredients until all are used.

Serving

    Slice and Serve

    Using a sharp knife, slice each Spam musubi in half or into bite-sized pieces. Serve at room temperature or warm.
