Preparation

Soak Noodles
Soak the rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.

Prepare Sauce
In a bowl, mix together the fish sauce, soy sauce, tamarind paste, brown sugar, lime juice, and Sriracha sauce. Set aside.
Cooking

Cook Tofu
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and fry until golden brown on all sides. Remove and set aside.

Cook Prawns
In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds. Then, add the prawns and cook until they turn pink and opaque, about 3-4 minutes. Remove and set aside.

Combine Ingredients
Add the soaked rice noodles to the skillet, followed by the prepared sauce. Toss everything together to combine, then add the cooked tofu, prawns, bean sprouts, and green onions. Stir-fry for an additional 2-3 minutes until heated through.

Garnish and Serve
Remove from heat and garnish with chopped cilantro and crushed peanuts. Serve hot with lime wedges on the side.
