Prepare Mochi Dough

    Mix the Ingredients

    In a large mixing bowl, combine 1 cup of sweet rice flour and 1/4 cup of sugar. Gradually add 1 cup of water while stirring until the mixture is smooth and there are no lumps.

    Cook the Dough

    Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap. Microwave on high for 1 minute. Remove and stir. Microwave for another minute, then stir again. Finally, microwave for a further 30 seconds. The dough should become sticky and somewhat translucent.

    Cool and Dust the Dough

    Carefully remove the bowl from the microwave and let it cool for about 10 minutes. Meanwhile, place 1/2 cup of cornstarch on a clean surface. Once cooled, transfer the mochi dough onto the cornstarch and dust the top with more cornstarch to prevent sticking.

    Roll Out the Dough

    Using a rolling pin, roll out the dough to about 1/4 inch thick. Cut out circles using a cookie cutter or a glass, approximately 3 inches in diameter.

Assemble Mochi Ice Cream

    Prepare Ice Cream

    Scoop the ice cream into small balls, about 1 tablespoon each, and place them on a baking sheet lined with parchment paper. Freeze for at least 30 minutes until firm.

    Wrap the Ice Cream

    Once the ice cream balls are firm, take one mochi circle and place a ball of ice cream in the center. Fold the edges of the mochi over the ice cream and pinch to seal. Repeat this process for the remaining ice cream and mochi circles.

    Final Freeze

    Place the finished mochi ice cream balls back on the parchment-lined baking sheet and freeze for at least 2 hours to firm up.
