Preparing Sticky Rice

Soaking the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in a bowl of water for at least 4 hours, or overnight for best results.

Steaming the Rice
Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam over boiling water for about 30-40 minutes, or until the rice is tender and sticky.
Making Coconut Sauce

Mixing Ingredients
In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar and salt dissolve completely. Do not let it boil.

Combining with Rice
Once the sticky rice is cooked, transfer it to a large bowl and pour about 3/4 of the coconut sauce over it. Stir gently to combine and let it sit for about 15 minutes to absorb the flavors.

Peel the ripe mangoes and slice them into thin strips or wedges.

If using, toast the sesame seeds or mung beans in a dry pan over medium heat until lightly golden. Set aside.

Serve the sticky rice on a plate, arrange the sliced mango on top or alongside the rice. Drizzle the remaining coconut sauce over the top, and sprinkle with toasted sesame seeds or mung beans if desired.
