Fish Preparation

Marinate the Fish
Add the Mahi Mahi fillets to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.

Grill the Fish
Preheat the grill to medium-high heat. Grill the Mahi Mahi fillets for about 4-5 minutes on each side or until cooked through and flaky.
Chipotle Aioli Preparation

Make the Aioli
In a bowl, mix mayonnaise, chopped chipotle peppers, minced garlic, and lime juice until well combined.
Cabbage Slaw Preparation

Prepare the Slaw
In a large bowl, combine thinly sliced cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine.
Rice Preparation

Cook the Rice
In a pot, combine white rice, water, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes or until rice is cooked and water is absorbed.

Warm the Tortillas
Warm the corn tortillas on the grill for a few seconds on each side.
