Prepare Noodles

Cook the Noodles
In a large pot, bring 4 cups of water to a boil. Add the saimin noodles and cook according to package instructions, usually about 3-5 minutes until tender. Drain and rinse with cold water to stop the cooking process.

Slice Vegetables
While the noodles are cooking, slice the bell pepper and carrot into thin strips, and chop the green onions, keeping the white and green parts separate.

Prepare Char Siu Pork
Cut the char siu pork into bite-sized pieces and set aside.
Stir-Fry

Heat the Oil
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

Add Char Siu Pork and Fish Cake
Add the char siu pork and fish cake slices to the skillet. Stir-fry for another 2 minutes until the pork is heated through and the fish cake is slightly browned.

Combine Noodles and Sauce
Add the cooked saimin noodles to the skillet. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and black pepper. Pour the sauce over the noodles and toss everything together to combine well, cooking for another 2-3 minutes.

Finish with Green Onions
Finally, add the white part of the green onions to the skillet and stir-fry for an additional minute. Remove from heat.
Serve

Garnish and Serve
Serve the fried saimin hot, garnished with the green parts of the green onions. Enjoy!
