Method
Salad Preparation
- 1
Grill the Chicken
Preheat a grill or grill pan over medium heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from the grill and let it rest before slicing into strips.
- 2
Prepare the Vegetables
Wash and chop the romaine lettuce into bite-sized pieces. Slice the green onions and chop the cilantro. In a large mixing bowl, combine the romaine lettuce, green onions, cilantro, and mandarin oranges.
- 3
Add Chicken and Toppings
Once the chicken has cooled slightly, slice it into strips and add it to the salad mixture. Top with wonton strips and sliced almonds.
Vinaigrette Preparation
- 4
Mix the Vinaigrette
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, salt, and black pepper until well combined.
- 5
Dress the Salad
Drizzle the vinaigrette over the salad just before serving. Toss gently to combine all ingredients and coat them with the dressing.
