Chicken Marinade

Prepare the Chicken
Cut the boneless chicken breast into thin strips (about 1 inch wide) for even cooking.

Make the Marinade
In a bowl, combine soy sauce, ground coriander, ground cumin, minced garlic, brown sugar, lime juice, vegetable oil, and salt. Mix well.

Marinate the Chicken
Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Peanut Sauce

Combine Ingredients
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red chili flakes.

Cook the Sauce
Whisk continuously until the mixture is smooth and heated through. Adjust the seasoning with additional chili flakes if desired. Remove from heat and set aside.
Skewering and Grilling

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Skewer the Chicken
Thread the marinated chicken strips onto the soaked skewers, leaving a little space between each piece.

Grill the Skewers
Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

Serve
Remove the skewers from the grill and serve hot with the prepared peanut sauce for dipping.
