Chicken Katsu Preparation

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Breading Process

    Dredge each chicken breast in all-purpose flour, shaking off excess. Dip in beaten eggs, and then coat with panko breadcrumbs.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium heat. Once hot, carefully add breaded chicken and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Curry Sauce Preparation

    Sauté Vegetables

    In a large saucepan, heat a small amount of oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.

    Add Carrots and Potato

    Add sliced carrots and diced potato to the saucepan. Cook for about 5 minutes, stirring occasionally.

    Add Broth and Seasonings

    Pour in vegetable broth, curry powder, soy sauce, and honey. Bring to a boil, then reduce heat and simmer for 15-20 minutes until vegetables are tender.

    Thicken Sauce

    In a small bowl, mix cornstarch and water to create a slurry. Gradually add this to the sauce, stirring constantly until thickened.

Serving the Dish

    Serve the Katsu

    Slice the chicken katsu into strips and serve over cooked rice.

    Pour the curry sauce over the chicken and rice.
