Preparing the Rice

Rinse the Sushi Rice
Rinse the sushi rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess starch and helps achieve the right texture.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
Preparing the Ahi Tuna

Dice the Ahi Tuna
Cut the Ahi tuna into small 1/2-inch cubes and place them in a mixing bowl.

Make the Poke Sauce
In a separate bowl, whisk together the soy sauce, sesame oil, green onions, and optional sriracha.

Combine Tuna with Sauce
Pour the poke sauce over the diced Ahi tuna and gently toss to coat the fish evenly. Let it marinate in the refrigerator for about 10 minutes.
Assembling the Aloha Poke

Serve the Rice
Divide the sushi rice into serving bowls as the base for the poke.

Add the Ahi Tuna
Spoon the marinated Ahi tuna over the sushi rice.

Top with seaweed salad, sliced cucumber, avocado, radish, and a sprinkle of sesame seeds.
