Mix the Base Ingredients
In a large mixing bowl, combine 1 cup of rye flour, 4 cups of water, 2 tablespoons of sugar, 1 teaspoon of salt, and 1 teaspoon of caraway seeds. Stir well until all the ingredients are fully incorporated.

Activate the Yeast
In a small bowl, combine 1 teaspoon of yeast with a few tablespoons of the prepared mixture from the previous step. Let it sit for about 10 minutes until it becomes frothy.

Add the frothy yeast mixture back into the large bowl with the rest of the ingredients. Mix well until a smooth batter forms.

Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours. Stir the mixture every 12 hours to aerate it.

If using, peel and finely chop the 2 garlic cloves and the medium beetroot. Add them to the mixture after the first 24 hours of fermentation for added flavor and color.
