Pie Crust
Make the Pie Crust
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.
Add the chilled, cubed unsalted butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
Divide the dough into two equal parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract until well coated.
Assembly and Baking
Assemble the Pie
Preheat your oven to 425°F (220°C). Roll out one disk of the pie crust on a floured surface to fit your pie dish.
Roll out the second disk of pie crust and place it over the filling. Seal the edges and cut slits in the top crust for steam to escape.
In a small bowl, mix the beaten egg with milk to create an egg wash. Brush the mixture over the crust.
Bake the pie in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 35-45 minutes, or until the apples are tender and the crust is golden brown.
Remove the pie from the oven and let it cool for at least 30 minutes before serving.
