Add Vinegar
Once the milk is heated, remove it from the heat and stir in the white vinegar slowly. Allow the mixture to sit for about 10 minutes to curdle.

Strain the Curds
Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curdled milk mixture into the colander to separate the curds from the whey.

Add Salt and Rennet
Sprinkle the salt over the curds and mix gently. If using rennet, dissolve it in a tablespoon of cool, non-chlorinated water, then add it to the curds and mix well.

Let the Curds Rest
Let the curds sit for another 5-10 minutes to firm up slightly.

Shape the Cheese
Gather the cheesecloth and form a pouch with the curds. Squeeze out excess whey and shape the curds into a ball or your desired cheese shape.

Chill the Cheese
Place the cheese in a bowl of cold water or refrigerate it to help it firm up further. If desired, add any optional flavorings at this stage.

Store and Serve
Once chilled, the cheese is ready to be enjoyed. Store it in an airtight container in the refrigerator for up to a week.
